When it comes to matching food with wine, selecting the right bottle to enhance your meal is key. But if, like me, you haven’t developed a refined palate or acquired the knowledge to do so, fret not. Wolfgang’s Steakhouse Singapore has taken out all the guesswork with The Italian, a new tasting menu that expertly pairs oysters and juicy cuts of Prime Black Angus Beef with the finest Italian wines.

Wolfgang’s Steakhouse Singapore also boasts an impressive wine cellar, with a carefully selected list of over 300 new and old age bottles, each chosen for their unique flavour profile. If you fancy yourself a wine connoisseur, you’re in for a real treat. Here’s what to expect from The Italian.

Start with Fine de Claire oysters

Whet your appetite with two fresh Fine de Claire oysters, which are paired with Is Argiolas Vermentino 2018 from Sardinia. Widely recognised as Sardinia’s leading wine producer, the Argiolas family created a wine with the Mediterranean palate in mind. It has an aromatic quality and a slight acidity that plays off the oysters’ creaminess, which left me craving for more.

Three cuts of USDA Prime steak

For the main course, you’ll be served three 120g cuts of Wolfgang’s famous USDA Prime steak on a plate, each cut paired with a different Italian wine to highlight their varying characteristics. USDA Prime Sirloin steak is paired with the Argiano Brunello di Montalcino 2014, made in Tuscany. The wine balances out the slightly smokey flavour of the lean sirloin.

Next up is the USDA Prime Ribeye steak, which is matched with the Tuscan Il Carbonaione 2012. The rich, spicier wine heightens the flavours of the marbled ribeye with its blend of dark fruits and berries. Don’t forget to dip your slices of meat into Wolfgang’s Old Fashioned Sauce – it lends a lovely tang to the steaks.

Last, but certainly not least, is the USDA Prime Tenderloin steak paired with Gianni Gagliardo Barolo 2014 – a personal favourite. The beef is grilled to tender pink doneness, and since the creamier wine is milder in acidity, it pairs well with the tenderloin.

If you’re unsure of which two sides to go with, I’d highly recommend the creamed spinach and mash potatoes; they go well with the refreshing wines too.

End with a slice of New York-style cheesecake

The meal will end with their New York Style Cheesecake, accompanied by a light Villa M Bianco NV from Piedmont. This sweet wine has intense citrus notes, which is perfect for Moscato lovers out there. Combined with sugary whipped cream on the side, this decadent cheesecake is one of the richest and most delightful I’ve ever had.

The Italian menu is priced at S$280++ per person. It is available for both lunch and dinner and will run until further notice.
