Newly opened White Marble will take you on a gastronomic journey around the Mediterranean sea

You may have heard or visited Black Marble, a highly sought-after steak restaurant by Chef Otto Weibel, one of the most respected F&B veterans in Singapore.

The famed chef has recently unveiled White Marble, a Mediterranean grill restaurant that pays tribute to the culture and cuisine of the Middle Sea.

Like Black Marble, White Marble stays true to Chef Otto’s culinary philosophy of using quality, fresh produce prepared with rigor and simplicity so that the ingredients’ naturally inherent taste can brought forth through its dishes.

When you dine at White Marble, expect to be brought on a gastronomic journey around the sea, as you’re introduced to flavours from Spain, Portugal, France, Morocco, and the Middle East.

The immersive menu that features flavours from the Middle East, Southern Europe, and Northern Africa is conceptualised by Chef Otto himself, and perfectly executed by his protege Executive Chef Kenneth Loke.

What to order at White Marble

If you’re visiting White Marble for the first time, go for the Mezze Plate (S$34, for two), a signature dish of the restaurant, which is also one of Chef Otto’s favourites.

This dish is the quintessential platter of the Eastern Mediterranean region and features classics such as the Tabbouleh with quinoa, Fattouche, Eggplant Moutabbal, Hummus, Chicken Skewer, and Pita. It’s a great “grazing” dish that you can share with your dining companions as you slowly work through it with a good glass of alcoholic beverage.

For starters, we recommend the Roasted Butternut Squash (S$12). This features roasted butternut squash with chilli yogurt and coriander salsa. Its seasoning with chilli oil, sunflower seeds, and seasonal herbs is nuanced so we didn’t find it overwhelming, and it kicked off our meal so perfectly, we felt excited about the rest of it.

Our favourite dish at White Marble has to be the Chicken Leg Bone-in Tagine (S$60, for two). This dish takes hard work to prepare; whole chicken legs are marinated with shawarma spice for a day. It’s first grilled, then cooked with whole red onions in the tagine and deglazed with chicken stock.

The meat is incredibly tender and steeped in flavour, and we also enjoyed the delicious and fragrant tomato sauce. In fact, we recommend ordering the Curry Leaf Pilaf Rice (S$8) to soak up every last drop of this amazing sauce.

There are three options for skewered meats.

If you enjoy skewered meats, the restaurant offers three options: Seafood (S$38), Australian Lamb (S$48), and Black Angus Beef (S$68). These are served with three sauces: Lemon Garlic Cream, Harissa Aioli, and Salbitxada. These aren’t just delectable but are also presented beautifully if you’re keen to take some great photos for the ‘gram.

Finally, for desserts, we enjoyed the Crema Catalana (S$16), a unique dish that originates from the region of Catalonia in Spain. And while the classic dessert usually includes citrus peels, White Marble’s version elevates it by featuring freshly squeezed orange juice, orange zest, freeze-dried tangerines, and candied orange peels.

The flavours and textures from the different variants of orange makes the dish exciting to taste and its refreshing taste uplifts the creaminess of the dessert, which may have otherwise been cloying. We love this so much, we definitely urge you not to miss it out when you’re there.
