Running every Friday to Sunday until 5 October 2025, this showcase by Executive Chef Andy Oh and his team brings together the best of land and sea in one indulgent feast.

The seafood display is a visual siren call: fresh Pacific seafood on ice, featuring Sustainably Sourced Boston Lobsters, Tiger Prawns, Pacific Clams, Half-shell Scallops, Sea Conch, Black Mussels, and Crawfish glistening like aquatic gems,
Nearby, a live oyster station tempts with Freshly-shucked Seasonal Oysters, each briny pearl accompanied by an array of accoutrements, from hot sauce and red-wine mignonette to mustard-dill, Thai nam jim, Tabasco, and lemon wedges, inviting diners to craft each bite to their own flavour preferences.
Beyond the cold bar, the hot counters continue to impress: Lobster Claws steamed into delicate Chawanmushi offer a silky umami whisper. On Saturdays, the Lobster Bisque enriched with Cognac envelopes the palate in luxurious warmth – its absence on the Sunday I visited was a notable miss in an otherwise abundant tableau.
The theatrical grill station delivers compelling drama too; smoky char lines accent the Barbecued Slipper Lobster, while the Mala Crawfish Baby Lobster Pot crackles with numbing spice and lively heat. Added to the mix are Giant Squid, tender with just a hint of chew, and the elegant En Papillote Queensland Grouper, whose steamy parchment release is pure sensory theatre.
From the Land
But it’s not all about the sea, the “turf” part of the experience was also incredible.
From the carvery, slices of Slow-Roasted Prime Rib arrive glistening and blushing pink, the kind of meat that needs nothing more than a sprinkle of sea salt to shine. The Marinated Lamb T-bone offers a robust, almost gamey richness, while the Rosemary Spring Chicken perfumes the air with woodsy herbs, its skin crisped to golden perfection. Together, the meat offerings balance indulgence with comfort, hearty enough to anchor your plate, yet prepared with finesse.
