Surf-and-Turf Buffet Style?! Now Available For A Limited Time at Edge

Seafood and grilled meats take centre stage once again with A Sea of Flavours at Edge buffet restaurant, a limited-time dinner experience running from Fridays to Sundays from now till 21 June 2026.

Known for its expansive international buffet spread, the award-winning restaurant turns its attention to premium oceanic produce this season, presenting a line-up that spans chilled seafood, charcoal-grilled specialties, and Asian-inspired creations.

Curated by Executive Chef Andy Oh and his culinary team, the showcase begins at the seafood-on-ice counter, where diners can indulge in Sustainable Boston Lobster, Snow Crab, Tiger Prawns, Pacific Clams, and Black Mussels. While the freshness of the seafood is reason enough to linger, it is the cooked dishes that truly define the experience.

Among the standouts is the Salt-baked Mud Crab with Chilli Sauce and Nam Jim Jaew, which delivers a satisfying balance of sweet crab meat and punchy spice, while the Stir-fried White Pepper Crab with Scallion offers a more fragrant, pepper-forward interpretation of the local classic. The Creamy Salted Egg Yolk Crab leans indulgent and comforting, pairing rich salted egg notes with succulent shellfish. Elsewhere, the Pulpo a la Gallega showcases tender Galician octopus finished with smoky paprika, while the Lobster Bisque with Cognac adds a luxurious touch with its deep, velvety flavour.

The buffet extends well beyond seafood. Premium meat offerings include the richly marbled Mayura Station Chocolate-fed Wagyu Beef served with ponzu and braised leek, alongside a deeply savoury 12-hour Braised Tajima Wagyu Beef Short Rib. The Wok-fried Crispy Frog Leg with Salt and Pepper also proves unexpectedly addictive, crisp on the outside while remaining tender within.

International highlights continue across the sprawling spread, from Japanese sashimi, sushi and maki to House-smoked Pork Belly, Tandoori Fish Tikka, and Chef Andy’s Signature Penang Char Kway Teow. One particularly noteworthy addition is the Mud Crab Dum Biryani, which layers aromatic rice with robust crab flavours for a hearty finish.

Desserts are equally abundant, with a live station serving Mango Pani Puri adding a playful, interactive element to the finale. Other sweet offerings include Yam Mousse Cake, Peach Tart, and Honey Jelly with Snow Bird’s Nest and Aloe Vera, balancing richness with lighter, refreshing textures.

To complement the feast, diners can opt for a bucket of five bottles of The Portman Lager at an additional S$78++. Specially brewed by Paulaner Bräuhaus Singapore for Pan Pacific Singapore, the smooth, full-bodied lager pairs particularly well with the buffet’s bolder seafood dishes.
