At the heart of “Tidal Treasures!” is the Fresh Fish Station, where guests can select their fish and have it prepared to their liking. Whether chargrilled or steamed, your fish can be enhanced with a choice of five delectable sauces: Green Thai Chilli, Sambal Onion, Szechuan Mala Sauce, Spicy Tomato Sauce, or Tarragon Lemon Butter.

Available only on weekends, the Giant Stingray with Sambal & Urban Farm Calamansi is a highlight you shouldn’t miss. This unique dish features a giant stingray marinated with spicy sambal and garnished with calamansi from Peppermint’s urban farm, creating a perfect balance of heat and citrus.

Look forward to the Herb-Stuffed Giant Barramundi with Tarragon Cream Sauce, a delightful offering that presents a giant barramundi stuffed with a medley of herbs and finished with a luscious tarragon cream sauce, promising a burst of flavour with every bite.
