The rich flavours of Singapore’s diverse and multi-racial heritage cuisine come alive through the expertise of local food icon, Chef Damian D’Silva, who passionately celebrates the culinary traditions of Chinese, Peranakan, Eurasian, Indian, and Malay kitchens at Rempapa.

In honour of National Day, a momentous occasion symbolising the unity and harmony among Singapore’s diverse population, Rempapa is putting the spotlight on two well-loved local snacks: Epok Epok Sayur (S$8 for three pieces) and Roti John (S$10 each).

These delectable National Day specials will be available for a limited time from 7 to 13 August, as part of Rempapa’s Cultural Celebration Series launched in 2022, which showcases Singapore’s multi-racial heritage cuisine, a cause close to Chef Damian’s heart.

The two snacks were carefully chosen because they are now rare finds in hawker centres, and Chef Damian believes they deserve a comeback. Rempapa’s renditions aim to bring back the authentic flavours of these heritage Malay snacks that are deeply rooted in history.

Originally sold by a hawker at Geylang Serai Market, Roti John was a simple combination of onions, eggs, lettuce, and tomatoes. Over time, it evolved to include minced mutton, gaining immense popularity until the hawker centre’s closure in 2001.

On the other hand, the origins of Epok Epok Sayur go back even further, influenced by Portuguese empanadas during the Malacca occupation in the 1500s. While it started with fillings of potatoes or vegetables, the variety with “Sayur” (vegetables) slowly disappeared over time, becoming a rare sight in present-day hawker centres.

Chef Damian’s Epok Epok Sayur delights with a homemade shortcrust pastry shell filled with lightly sauteed vegetables like cabbages, beansprouts, carrots, jicama, taukwa, and fragrant dried shrimp, served with a special chili cuka, perfect for a picnic while enjoying the National Day Parade fireworks.

Meanwhile, the Roti John features the comforting flavors of Masala Spiced Chicken, onions, peas, sliced cucumbers, and shredded lettuce, served in a grilled bun resembling a burger bap, with chili and tomato sauce on the side. Made with low-carb, high-fibre buns from Singaporean food tech company Upgrain, it combines heritage flavours with a nod to the future.

To complement the National Day celebrations, Rempapa is launching a new Kueh Heritage Gift Box on their online delivery platform Oddle. Featuring small-batch, hand-crafted kuehs and cakes, these gift boxes are perfect for sharing Singapore’s sweet national pride with family and associates.
