The iconic Chatterbox restaurant in Singapore is introducing a special four-course menu for Mother’s Day celebrations, which includes some of their best dishes and two complimentary glasses of either Cousiño-Macul Sauvignon Blanc or Cava Sparkling Wine.

Rempapa - mother's day

In Rempapa, Chef Damian D’Silva celebrates this deep connection and showcases his wealth of heritage recipes from remarkable mother figures in his life.

Rempapa offers a wide variety of heritage dishes that make a perfect communal feast.

Take, for example, the vegetarian-friendly Chickpea curry with Roti (S$18), cooked with blistered red bell peppers, fresh red tomatoes, Kashmiri chilli powder, and turmeric powder, resulting in an amalgamation of Indian and Eurasian curry flavours. This dish is completed with mustard seeds which are popped in ghee, then added to the chickpea mixture.

The Hakka Fried Pork (S$20) is another classic heritage recipe. The pork belly is marinated for at least 16 hours with fermented bean curd, five spice powder, black bean sauce, white pepper, and hua diao wine. The marinated pork belly is coated with cornflour before it is deep-fried till crispy, then sliced and served.

One of the most special dishes in Rempapa is the Babi Pongteh (S$38), which is only cooked by Chef Damian’s maternal grandmother during special celebrations. This Peranakan dish presents a blend of fresh garlic and preserved soya beans which are sauteed till fragrant. Dried shiitake mushrooms are added, followed by sliced pork belly and bamboo shoots. The pork is left to be braised till fully cooked and tender.

If you are looking for a dish with a smoky aroma, the Ayam Pelencheng (S$16) is a perfect choice. Each boneless chicken thigh is marinated for at least a day with fresh rempah consisting of a blend of grounded chilli, salt, and calamansi. The chicken is then freshly grilled to perfection upon order.

The Baca Assam (S$46), or commonly known as the “lost” Eurasian heritage dish, presents a mix of Peranakan and Indian flavours, which was only prepared by Chef Damian’s paternal grandfather during elaborate occasions. In this dish, a fine paste of dried chillies, shallots, turmeric, galangal, and candlenuts is fried. Once fragrant, beef cheek is added and slightly browned then cooked with beef stock and tamarind water till the meat is tender.

On Mother’s Day, guests can show their appreciation for the special women in their lives by treating them to a brunch buffet at Racines. The spread offers quality ingredients from both land and sea, featuring classic French dishes and familiar local Chinese flavours.

The gastronomic journey begins with five seafood and fruit-based salads, including seafood on ice with a spread of lobsters, oysters, poached tiger prawns, scallops, and black mussels. This is followed by a selection of fresh sashimi, sushi, and seafood-based snacks like Oyster Croquettes, Fried Prawns, Seafood Spring Rolls, and Racines’ crowd favourite Ngoh Hiang.

The epicurean affair continues with elevated French mains such as Pan-seared Atlantic Sea Scallops with Fennel Confit and Herbs, French Magret Duck Breast with Orange Reduction (spice-cured for six hours), and Baked Rock Lobsters with Garden Basil Béarnaise made à la minute.
