Sometimes, we can get a little lazy when it comes to cooking and we just opt to buy food from the nearby coffeeshops or delivery platforms. But what about those days that you don’t feel like spending extra money? Well, we’ve got the solution for you.
How do you fancy a decadent cheese baked rice with luncheon meat?

Cheese baked rice with luncheon meat recipe
Using items that you probably already have in your kitchen, you can easily make this meal without having to leave your house for additional groceries. And here’s the best part: you don’t have to turn on the stove and stand there to cook at all! You can just leave it in the oven while you do some work or watch your favourite Korean dramas.
Ingredients needed (serves two)
Here’s what you’ll need:
- 2 empty luncheon meat cans or 2 disposable rectangular aluminium tins (15cm x 12cm x 4.6cm)
- Luncheon meat
- 2 bowls of cooked rice
- 2 eggs
- Seaweed flakes
- Mozzarella cheese
- Mayonnaise
- Chopped parsley
- Ziploc bag
Instructions
Step 1: Empty out two luncheon meat cans and wash them clean. Set them aside for the time being. If you’re not comfortable with using the cans due to health concerns over placing them in the oven later, you can also use disposable rectangular aluminium tins that are oven-safe.
Step 2: Cut two thick slices of luncheon meat as seen in the photo below. The two slices will be what you’re going to use, so you can keep the rest in the fridge.

Step 3: Place the two slices of luncheon meat and two bowls of rice in a huge ziploc bag.


Step 4: Then, crack two eggs into the mixture and sprinkle seaweed flakes generously on the top.


Step 5: Seal the ziploc bag tightly and start mixing everything together until it’s even. You can do so by just mashing the ingredients with your hands.

Step 6: Scoop the mixture into the empty cans or aluminium tins you set aside earlier. Be sure to leave a bit of space at the top after you’ve smoothened the rice out.


Step 7: Sprinkle some mozzarella cheese on top of the rice.

Step 8: It’s finally time to place the rice in the oven! Set the temperature to 170°C and leave the cans or tins inside for 15 minutes.

Step 9: Take them out and you should see that the cheese has melted and is now a beautiful golden-brown.

Step 10: Squeeze some mayonnaise on the top and sprinkle some chopped parsley for taste.
