This new launch is a piece of Chef May’s own fond childhood memories in Thailand, which she remembers as unassuming but heartwarming, and she aims to bring the same experience to her diners.

With each steamy pot of fragrant Pandan Jasmine Rice Porridge accompanied by a charming tiffin filled with thoughtfully curated sides, the dining experience brings the nostalgic joy of a home-cooked meal, infused with bold Thai flavours.

The porridge itself is a delight, especially the Pandan version, which offers a subtle, fragrant aroma that elevates the comforting nature of the dish.

Both adults and children can enjoy this hearty meal, though for young ones, selecting the non-spicy sides is recommended. The sets, priced at S$23.90 for two and S$52.90 for four, provide excellent value for those looking to share and savour a variety of tastes. The unlimited porridge refills ensure no one leaves hungry, making it perfect for communal dining.

Among the side dishes, a few truly shine. The Thai-Chinese Fish Sausage (Kun Chiang Pla), made with fish rather than the usual pork, is a lighter, healthier option that still delivers on flavour. Its delicate texture pairs well with the porridge, adding a gentle savoury note.

Another must-try is the Garlic & Chili Popcorn Chicken — crispy, bite-sized pieces bursting with the addictive aroma of Thai-style garlic and chili. The dish’s bold flavours are sure to satisfy those seeking a punchy, spicy kick.

For a richer option, the Thai Stewed Pork Belly and Eggs is a showstopper. The pork belly, slow-cooked with aromatic spices, reaches a level of tenderness that allows it to practically melt in your mouth. The hard-boiled eggs, which have a slightly runny yolk, provide a wonderful texture contrast, adding to the dish’s hearty, comforting appeal.

Beyond the porridge, Fourgather introduces the Creamy Lava Scrambled Egg, which captivated me with its silky, smooth texture. Paired with Garlic Prawns, it was so addictive that I found myself craving it even the day after.

The “lava” effect, where the eggs cascade over the fragrant jasmine rice, creates a visually appealing dish with a rich, buttery mouthfeel. The choice of proteins, including prawns and crispy pork belly, adds flexibility to the dish, catering to different tastes. The option to customise spice levels allows diners to tailor their experience to personal preferences.

Other new additions, like the Thai Crab Laksa (Kanom Jeen Puu) and the Slow Braised Pork Knuckle, continue the theme of hearty, flavourful Thai fare.
