Fiamma presents new spring menu that uses fresh, seasonal ingredients

The esteemed Fiamma restaurant has unveiled its new spring menu, featuring dishes that pay tribute to the season and Chef Mauro Colagreco’s culinary journey.

With a focus on fresh produce like asparagus, fava beans, and artichokes, each dish is thoughtfully crafted using traditional Italian cooking techniques. The menu offers an exquisite range of dishes, from antipasti to desserts, that brings to mind a homemade Italian meal.

FIAMMA - BURRATA PRIMAVERA
Burrata Primavera

The antipasti course is a must-try, featuring dishes such as Burrata Primavera, served with seasonal fava beans and peas, and Asparagi Verdi Alla Griglia, grilled asparagus served with homemade arugula pesto and olive oil dressing.

The Insalata Di Mozzarella Di Bufala, a salad, is one of my personal favourites. The generous slices of tuna and mozzarella are satisfying while the refreshing dressing uplifted my palate so I could go for more servings.

FIAMMA - TORTELLINI PANNA PROSCIUTTO TARTUFO
Tortellini Panna Prosciutto e Tartufo

Primi options include Chef Mauro’s curated selection of pastas and pizzas, perfect for sharing with loved ones. The Tortellini Panna Prosciutto e Tartufo, a childhood favourite of Chef Mauro, is a decadent combination of creamy truffle sauce, prosciutto, handmade tortellini, peas, seasonal greens, and fresh truffle.

FIAMMA - RISOTTO AL GRANCHIO E RICCI DI MARE (CROPPED)

The Risotto al Granchio e Ricci di Mare was a clear winner at my table. Everyone enjoyed the rich flavour of the dish enhanced by decadent sea urchin and balanced by the fresh flavours of crab.

FIAMMA - CALZONE NAPOLETANO
Calzone Napoletano

Pizza-lovers will enjoy the Calzone Napoletano, a traditional Neapolitan pizza folded over and filled with sausage, eggplant, Provolone del Monaco cheese, and tomato sauce, or the Costiera, featuring a medley of seafood including prawns, mussels, and squid atop a crispy pizza crust.

Costoletta di Agnello alla Brace

The Secondi course is equally impressive, with highlights such as the Costoletta di Agnello alla Brace, a succulent grilled lamb chop served with rosemary potatoes and seasonal vegetables, while the Trio di Vegetali Ripieni presents stuffed vegetables with taggiasca olives, fresh herbs, lemon, and cheese, a perfect accompaniment to the flavours of spring.

End your meal on a sweet note with handcrafted desserts. Opt for the Delizia al Limone, a refreshing lemon cream, ice cream, and yogurt espuma enhanced by the delicate taste of honey if you are looking for a great palate-cleanser but I’d certainly recommend the Tiramisu if you want something unforgettable.
