In the heart of Singapore’s buzzing dining scene, the newly opened Cygnet at QT Singapore, led by award-winning Chef Sean Connolly, is a tribute to global ingredients with a French flair, transforming an historic space (formerly the Hotel Telegraph) into a lively Manhattan-inspired steakhouse.

AVENUE ONE visited the new restaurant and found the setting is refined yet playful, filled with thoughtfully curated menu and attentive service that makes you feel both pampered and at ease.

Cygnet: Food Review

A truly memorable start to the meal is the Devilled Egg (S$12), which blend creamy richness with a subtle heat, perfectly balanced to awaken the palate without overpowering it. These little bites come nestled in a cheeky, whimsical cup propped up on duck feet — a touch of humour that sets a lighthearted tone for the experience.

For those in search of indulgence, the Caviar Service (S$105 for 30g/S$160 for 50g) is as luxurious as it sounds. House caviar is served with traditional accompaniments — chives, chopped eggs, sour cream, and crusty bread — to allow every bite to be savoured in your own unique way. It’s a silky, opulent start that hints at the indulgent menu ahead.

The Baked Scallop with pistachio pesto (S$17) is a highlight for shellfish lovers. Perfectly cooked, each tender scallop practically melts in your mouth, the sauce adding a rich layer of buttery goodness.

Another shellfish wonder, the Half Boston Lobster with garlic butter (S$62), is a standout with its generous, succulent flesh that slides right out, each bite imbued with the mouthwatering aroma of garlic and a whisper of the sea.

A showstopping Table Side Caesar Salad (S$32) entertains as it’s assembled before your eyes, with every ingredient meticulously mixed for freshness. It’s a refreshing interlude in the menu and substantial enough for three to four people to share, pairing well with the heartier dishes to come.

Seafood lovers will also find delight in the Cornish Cod with leek and oyster chowder (S$52). The buttery, flaky cod is bathed in a creamy, subtly briny chowder that elevates each mouthful. A generous portion, it leaves you satisfied yet craving more.

And then there’s a huge Meat Library that offers a variety of beef options. We went for the Scotch Fillet (S$78): a 350-gram cut of O’Connor black Angus beef from Victoria, Australia. Simply seasoned with salt and pepper, the steak’s natural flavours shine through, needing little more than a dab of the café de Paris butter for an indulgent, hearty finish. Pair it with Smoked Mash Potato (S$14) or Charred Broccolini with anchovy dressing (S$16) for an earthy balance.
Cygnet also offers a well-curated drinks menu for those who would like to enjoy a tipple or two.
For those visiting during lunch, Cygnet offers an enticing set menu, where you can enjoy two courses at S$58 or three at S$68.
Starters include the ever-popular Prawn Cocktail, while mains like the Wagyu Burger and King Crab Linguine promise a satisfying midday indulgence. To finish, classic desserts like New York Cheesecake and Crème Caramel provide the perfect sweet ending to an unforgettable dining experience.
