Roasts

The most important thing when you’re preparing roast beef is deciding the cut that you would be using. In order to ensure that the meat is tender, you should opt for cuts like prime rib, ribeye, and beef tenderloin. Of course, for a better quality, you would also have to pay a lightly higher price.

Alternatively, you can also go for the shoulder, sirloin tip, rump roast, or bottom round. It is best that you opt for an end cut with a layer of fat).

Ingredients you’ll need:

  • 1.3 to 1.6kg of boneless rump roast
  • 1 tablespoon of extra virgin olive oil
  • 8 to 10 slivers of garlic (3 to 4 cloves, sliced in half or thirds)
  • salt and pepper

For the gravy

  • red wine, water, and/or beef stock
  • 1 tablespoon of cornstarch

Roast Turkey

Roast turkey always looks so flavourful, and its glistening golden brown skin makes it even more drool-worthy. And since it’s so big, there’s going to be enough to go around, especially when you’re hosting a huge party.

  • 5.44kg of turkey
  • salt and pepper for the inside and outside of the turkey

For the flavoured butter:

  • 226g of unsalted butter, softened
  • 2 tablespoons of olive oil, plus a bit more to drizzle the top
  • 4 tablespoons of fresh lemon juice
  • 1/2 tablespoon of lemon zest
  • 3 large garlic cloves, pressed
  • 1/4 cup of freshly chopped parsley
  • 1/2 tablespoon of salt
  • 1/2 teaspoon of black pepper, freshly ground

For the turkey stuffing:

  • 1 large onion, quartered (no peeling)
  • 4 garlic cloves, halved (no peeling)
  • 1/2 bunch of parsley
  • 1 lemon, quartered

It is important to note that this recipe will feed 12 people, so if you’re only cooking for a party of eight or fewer, you can either pack the leftovers for your guests to bring home, or roast a chicken instead.

Garlic herb butter roast chicken

If you’re preparing for a slightly smaller party, or if you prefer to have more variation for the feast and not just rely on one whole turkey as the main course, you can prepare this garlic herb butter roast chicken that is sure to win every other rotisserie chicken out there.

Roasted potatoes
