There’s a certain romance to Hong Kong’s dining culture; think the clattering of dim sum baskets, the aroma of roast meats glistening under warm lights, the comfort of a slow-simmered soup. At Café Mosaic in Carlton Hotel Singapore, that spirit has been distilled into a weekday-only affair: the Hong Kong Kitchen Lunch Buffet, available Mondays to Fridays from 12pm to 2.30pm.

At S$58 per adult and S$18 per child (aged 7 to 12), the buffet already feels reasonably positioned for a hotel spread, but with 30% off for Citibank, DBS/POSB, OCBC or UOB cardholders, it becomes especially compelling, making it ideal for business lunches or leisurely catch-ups that stretch a little past 2pm.

The experience begins with familiar anchors: seafood on ice and cold cuts, permanent fixtures at Café Mosaic that deliver dependable freshness. Chilled prawns and mussels glisten invitingly, offering a cool counterpoint before the richer flavours ahead. On rotation are cold Hong Kong-style appetisers such as shredded roast duck, prawn salad and a mild spicy jellyfish salad made their appearance. Each was thoughtfully seasoned, clean-tasting and restrained, allowing texture to play as much a role as flavour.
The soup of the day on my visit was Pork Ribs Lotus Root Soup. This is deeply comforting, with that gentle herbal sweetness that only comes from hours of patient simmering. It felt like something you’d be served at a family table rather than a buffet line, and I would have gone for a second ladle if I wasn’t saving my stomach for more food the buffet had to offer.
Dim sum is, of course, essential to any Hong Kong-inspired spread, and here it doesn’t disappoint. The pork siew mai were plump and juicy, while the glutinous rice parcels were fragrant and satisfyingly sticky.

Yet the true crowd magnets were unmistakable: egg tarts and bolo buns, constantly replenished as diners eagerly cleared each tray. The egg tarts had a delicate wobble and buttery crust, while the bolo buns were soft within, their lightly crisp tops giving way to pillowy centres. The only complaint I have? I was looking forward a thick slab of cold butter to go with them, but I only found mini portions that have unfortunately melted under the strong and warm lighting.
At the live station, the Hong Kong French toast emerges golden and crisp-edged, made à la minute so you’re guaranteed it hot and fresh. Customising it with condensed milk and pork floss adds a playful indulgence — sweet, savoury, unapologetically decadent. Beside it, roasted pork belly is carved into generous portions, the crackling audibly crisp before yielding to tender layers beneath.

The hot mains weave together Hong Kong classics and Singaporean favourites, with selections rotating regularly. On the day I visited, steamed whole fish stood out for its delicate execution, while curry fishballs delivered a nostalgic street-style punch. It’s worth noting that offerings change, giving repeat diners something new to look forward to.

What gives the buffet a touch of whimsy are the two DIY stations — muah chee and ice kacang — where you can assemble your own bowl just the way you like it. It’s a small detail, but one that adds both interaction and nostalgia to the meal.
Desserts continue the cross-cultural narrative. Guilin gao offered a subtle herbal sweetness, while Japanese cheesecake provided a lighter, airy finish. There’s also a rotating Hong Kong dessert of the day; mine was osmanthus red date soup, floral and gently sweet, a soothing way to close the meal.
Beverages are free-flow — juices, coffee and tea — but the real highlight is the Hong Kong milk tea. Robust yet silky, it carries that distinctive strength and creaminess that defines the classic. I went back for seconds without hesitation.
The buffet is currently only available for lunch, but here’s hoping they would open it up for dinner bookings in the future.
