Renowned chef Gordon Ramsay is certainly an expert in making all kinds of dishes, but the one signature dish that has become synonymous with his name is probably the Beef Wellington.
The earliest documentation of this classic dish may have been 1903, but most of us who have caught Hell’s Kitchen or Masterchef that featured Chef Ramsay remember his version: a perfectly seared beef filet, encased in a golden puff pastry, and served with rich accompaniments like creamy mashed potatoes and red wine jus. This iconic dish is now served in his restaurants all over the world.
It probably isn’t surprising that Bread Street Kitchen & Bar – Gordon Ramsay’s restaurant in Singapore – will be celebrating Worldwide Wellington Month in October with some fanfare.
From 4 October to 31 October, Bread Street Kitchen & Bar will introduce a new dish, the Black Cod Wellington. This is served with velvety smooth mashed potato, broccolini, and a fragrant moilee sauce that resembles a coconut curry.
The Bread Street Kitchen team shared that they have experimented with several types of fish for this dish, including salmon and monkfish, but finally decided that black cod gave the best result.
I tried it and love how it was able to hold well to the pastry while not losing the creamy and flaky texture that black cod is known for.
The moilee sauce that comes with an good hint of spices helps elevate the dish so it becomes more flavourful – something that its Beef Wellington counterpart is associated with.
I’ve tried the Beef Wellington from the Bread Street Kitchen and it’s delectable, but I’d encourage you to go for the Black Cod Wellington this October because it’s only available for a month and also because it’s delightful dish to have, especially if you want a lighter meal.
The Black Cod Wellington is available in a special three-course menu called The Wellington Experience.
In this special menu, you’ll start with a selection of appetisers: either the Roasted Beef Tonnato or the Seabass Carpaccio.
For the main course, you can choose between the Black Cod Wellington and the iconic Beef Wellington, which is complemented by truffle mash potatoes, honey roasted carrots, and red wine jus.
Finally, you’ll finish off your meal with the perennial favorite Sticky Toffee Pudding, accompanied by a quenelle of clotted cream ice cream.
Alternatively, you may want to order the exclusive Chocolate Wellington from its a la carte menu. The restaurant has brought back this delectable masterpiece that features a rich dark chocolate core delicately enveloped in a glazed, flaky pastry, served with luscious house-made Tahitian vanilla bean ice cream.
The Chocolate Wellington is sure to delight diners of all ages at your table. Don’t forget to have your cameras ready to capture the moment when you slice through the pastry, revealing the luscious oozing chocolate within.
The Wellington Experience is priced at S$98++ per person, with the option to add a sommelier wine pairing for an additional S$48++ per person. The Chocolate Wellington is priced at S$32++.
