  • Classic Taiwanese Dumpling with Sesame Oil Chicken (S$18.80): Inspired by Taiwanese flavours, this is filled with a combination of chicken leg, fungus, Chinese rice wine, and sesame oil.
  • Teochew Dumpling with Yam Paste and Gingko Nuts (S$10.80): Drawing inspiration from the local yam dessert (orh nee), this will certainly be a unique bak zhang to dig into.

First up is the Traditional Abalone & Jinhua Ham Glutinous Rice Dumpling (S$48) which is an indulgent burst of umami flavour thanks to 12-head abalone, Jinhua ham, Japanese dried scallops, roast duck, pork belly, and chestnuts.

If you like all things spicy, then don’t miss the Spiced Pork Belly Glutinous Rice Dumpling (S$18) which is a hearty classic with a piquant twist, combining two hero ingredients – tender pork belly and Japanese dried scallops. To finish it off, sambal and Sakura shrimps are added into the mix to elevate the spicy, umami taste.

For something that hits the sweet spot, try the Kee Chang Bak Zhang with Raffles Signature Kaya Jam (S$22 for 5 pieces), a classic dumpling that’s accentuated with the rich and fragrant coconut-based spread.
