Akira Back Singapore Launches Scrumptious Brunch Experience, Available Every Saturday

Akira Back Singapore offers a reimagined brunch experience through the A.B.C, Akira Back Brunch Club, available every Saturday from 12pm to 2:30pm at S$98++ per person.

Chef de Cuisine Bill Hong artfully combines modern Japanese cuisine with Korean influences, inspired by Chef Akira Back’s heritage and culinary journey.

The brunch menu, launching on 13 July 2024, features classic staples, oceanic delights, Korean-inspired dishes, and exquisite desserts.

One of the standout dishes for the AVENUE ONE team is the Tuna and Mushroom Pizza. This signature dish, available across Akira Back’s global locations, showcases the restaurant’s creativity and culinary prowess. Another must-try is the Wagyu Tacos, which epitomise the inventive spirit of the restaurant.

For sashimi and nigiri enthusiasts, the free-flow Chef’s Daily Assortment is a highlight.

The selection includes Salmon, Akami, Spanish Mackerel, Sea Bream, and Maki Rolls such as the Red Dragon (with Crab Meat, Mayo, Shrimp Tempura, Cucumber, and Spicy Tuna) and Spicy Garden. Each bite is a harmonious blend of textures and flavours.

Additionally, savour the succulent Japanese Oyster with four handmade sauces: Yuzu Ponzu Vinaigrette, Wasabi, Tomato Salsa, and Yuzu Oroshi. The hot favourite at our table? Yuzu Oroshi, which really brought out the fresh flavours of the oysters.

From the Korean-inspired creations, the Mung Bean Pancake is memorable. This savoury treat, with a crisp pan-fried exterior encasing Minced Pork, Mung Bean, and Bracken, is accompanied by an AB Kimchi Salad, offering a delightful nod to Chef Akira Back’s Korean roots.

The Hot Collection, also free-flow, boasts five savoury dishes. The Kanpachi Kama (Yellowtail Collar) is a must-try, alongside the Beef Toban, which features Sliced Angus Beef with an assortment of Shimeiji, Eringi, Shitake, Shishitou, and selected vegetables.

To conclude the brunch, the dessert platter features three intricate creations: AB Cigar, Apple-y, and Hojicha Ice Cream. We especially enjoted the Apple-y, a dessert shaped like an apple, which reveals diced apple cubes and light mousse beneath its smooth, velvety exterior, providing a delightful finale to the meal.
